Marinate the chicken

In a bowl, combine the yogurt, grated ginger, garlic, all the spices, salt, and lemon juice. Add the chicken pieces and mix until every piece is coated. Cover and refrigerate for a minimum of 30 minutes. The yogurt tenderises the meat and the spices permeate more deeply the longer it sits (up to overnight).
