Prepare the apple filling
Peel, core, and finely dice the green apples into small, even cubes. Roughly 5–7mm. Place in a bowl and immediately toss with the brown sugar, cinnamon, and lemon juice. The lemon juice prevents browning and adds a sharp note that balances the sweetness. Set aside for 10 minutes. The sugar will draw out a little juice, which is fine.
