Chilli cucumber (make first. Needs to marinate)

Smash the cucumber with the flat of a knife, then cut into rough chunks. Smashing creates more surface area for the dressing to cling to. Place in a bowl and add the garlic, rice vinegar, soy sauce, chilli oil, sesame oil, and sugar. Toss thoroughly and refrigerate for at least 30 minutes. The cucumber will soften slightly and absorb the dressing deeply.
