Biscuit Base

200g digestive biscuits (or graham crackers)
100g unsalted butter, melted

Prepare the biscuit base

Crush the digestive biscuits to fine, even crumbs using a food processor or a rolling pin in a sealed bag. Pour over the melted butter and mix thoroughly until every crumb is coated. It should feel like damp sand. Press firmly into the base of a 20cm springform tin in an even layer, using the base of a glass to compact it. Refrigerate for at least 30 minutes to firm up.
