Crispy golden spring rolls with a pork, glass noodle, and vegetable filling. The kind you get from a good Chinese takeaway, but better. Served with a homemade sweet and sour dipping sauce.

200g pork mince
80g glass noodles (soaked in hot water 5 min, cut short)
2 spring onions, finely sliced
2 cloves garlic, finely minced

Directions

Make the dipping sauce

Combine the rice vinegar, sugar, ketchup, soy sauce, garlic, and chilli flakes in a small saucepan. Heat over medium heat, stirring until the sugar dissolves. Add the cornstarch slurry and stir constantly for 1–2 minutes until the sauce thickens slightly and turns glossy. Remove from heat and set aside to cool. It will thicken further as it cools.
